Sarsan mutton cutlet (from
thanjavur (tanjore) in tamil nadu , south india) ---------------------------------------------- ----------------------------------------------- Things you need: Mutton(ground) :200 gms egg: 2 nos potato: 3 nos Ginger : 20 gms Garlic : 20gms Coconut : (from around 1/4th of a coconut) cumin (geerakam) : a little according to taste Small onion(sambar onion): a little according to taste around 100 gms Chilly powder : 1 teaspoon Turmeric powder: 1/4th teaspoon Tomato: 1 no Salt Cooking Oil Grind ginger, garlic,cumin and coconut into a paste . Cook the ground mutton and potato in a pressure cooker with a little amount of water. Mash the cooked potatoes. Whisk the contents of the egg. ================ * * ================ Pour around 1 teaspoon of oil in a frying pan, and fry the chopped onion and tomato in it. Then add the paste of ginger, garlic,cumin and coconut to it. Add Chilly powder ,turmeric powder to it and fry. Then add the ground mutton (now cooked) along with the water in which it was boiled.Add some salt to taste and keep stirring. Add mashed potato to this mixture when the mixture in the frying pan starts to dry out. Cook till everything is somewhat dry and allow to cool. Press into small cutlet like shape.
